Vanilla Cream Frosting
What you need:
½ cup (1 stick) margarine, softened
3 cups sifted confectioners' sugar
4 tablespoon vanilla extract
What you do with it:
1. Put the softened margarine in a large mixing bowl. Cream it until it's soft and fluffy by rubbing it against the side of the bowl with the back of a spoon.
2. Slowly mix in 1 cup of the sugar. Then mix in 2 tablespoons of the milk. Mix in another cup of sugar and another tablespoon of milk. Then mix the rest of the sugar and the rest of the milk. The mixture should be creamy so that it will be easy to spread.
3. Add the vanilla and beat with an eggbeater until the frosting is light and fluffy. If you want a softer frosting, stir in another tablespoon of milk.
Make enough to frost and thinly fill a 9-inch layer cake (or frosts about 24 cupcakes)
